Thorn-Clarke Varietal Collection Chardonnay

This pale straw-coloured Chardonnay from Eden Valley showcases the region's distinct character. The nose features vibrant grapefruit and white nectarine, with added complexity from partial wild fermentation, lees stirring, and oak maturation. The medium-bodied palate is marked by crisp acidity and a creamy finish. Flavours of grapefruit, apple, and white peach are complemented by a hint of minerality and subtle oak influence.

This Chardonnay from Mt Crawford was harvested at night to retain its fresh acidity. The grapes were pressed immediately, with only free-run juice used. Fermentation occurred in stainless steel tanks and French oak barrels, with wild yeast in the oak portion to add complexity. After blending, the wine was aged on lees in oak for four months, enhancing its texture. Minimal fining and filtration result in a wine with vibrant fruit, subtle oak, and a creamy mouthfeel.
