Thorn-Clarke Shotfire GSM 2022

The wine is deep red with vibrant purple hues. The nose is complex, featuring savory white pepper and clove, complemented by brighter notes of wild strawberries and mulberry. On the palate, cherry compote, cinnamon, and cedar spice unfold, leading to a wine with great complexity, structure, and length.

Each variety was destemmed and fermented separately in small 6-tonne open fermenters. The Grenache underwent 10 days of pump overs, while the Shiraz and Mourvèdre had 7 days, both at 22-25°C to maintain fruit purity. After fermentation and malolactic fermentation, the wines were racked into new (10%) and 10-year-old French hogsheads for 18 months of maturation. Bench blends ensured a harmonious final wine.
