Thorn-Clarke Sandpiper Shiraz 2021

Sandpiper Shiraz displays vibrant black fruit aromas, enhanced by rich winter spice. Distinct flavors of satsuma plum and black cherry are complemented by soft tannins, resulting in a wine with great length and balance.

The grapes are crushed and de-stemmed into fermenters, with yeast added immediately. The must is pumped over twice daily to maximize color, tannin, and flavor extraction. Fermentation temperatures are controlled between 22-25°C to enhance fruit expression. After approximately seven days, the wine is pressed and transferred to French oak for maturation, where it stays for up to 12 months.
