Basket Pressed Shiraz 2019 Tait Wines

Dense black purple colour with an intense aroma of blackberry preserves, spicy notes with hint of vanilla and coffee. The flavour is full bodied, warm and mouth filling. Concentrated fruit supported by chewy tannins, crisp acid and long length.

Grapes are picked for peak ripeness of sugar and flavour and destemmed into open fermenters. The pH is adjusted and fermentation takes place over 10 days at approx 24°C, plunging and pumping 3 times a day. The wine is then pressed using a Basket Press and transferred to barrel for malolactic fermentation. Its then racked and returned to barrel 2-3 times over 24 months to ensure a clean wine that does not need fining or filtration.
