The Ball Buster Shiraz Cabernet Sauvignon Merlot 2021

A dense black-purple colour with rich spicy notes, supported with balanced vanillin oak, cinnamon, nutmeg, and a generous lashing of redberry fruits. The palate is rich and bold, supported with balanced fruit and acid. The long finish is ongoing with fine tannin and dark chocolate.

Grapes are picked for peak ripeness of sugar and flavour and destemmed into open fermenters. The pH is adjusted and fermentation takes place over 7-10 days at approx 24°C, plunging and pumping 3 times a day. The wine is then pressed using a Basket Press and transferred to barrel for malolactic fermentation. It's then racked and returned to barrel 2-3 times during a 24 month period to ensure a clean wine that does not need fining or filtration.
