The key to crafting a standout Pinot Grigio is minimal skin contact and harvesting the fruit before acidity begins to drop. The grapes undergo a short air bag press to minimize color extraction, followed by a quick 5-day fermentation. The wine is left on its fermentation lees until bottling, adding complexity and texture. It is then cross-flow filtered and bottled to preserve the true beauty of this stunning wine.
