Thorn-Clarke Shotfire Shiraz

Inky red with purple hues at the rim, this wine boasts dense aromas of blackberry and plum, complemented by five spice, smoke, and dark chocolate. The rich, generous palate highlights the quintessential traits of Barossa Shiraz, with ripe black plum, black pepper, and liquorice, all supported by integrated, complex oak. Plush and mouth-filling, the wine has long, savory tannins that add structure. While destined for long cellaring, it can also be enjoyed now for its vibrant fruit expression.

The grapes were de-stemmed into fermenters, and the ferments were pumped over twice daily to maximize color, tannin, and flavor extraction. Cooling maintained fermentation temperatures between 22-25°C to preserve fruit expression. Pressing occurred about seven days after fermentation began, and the wine was matured in 40% new American hogsheads, with the balance in 2nd and 3rd fill barrels, for 14 months.
