This 2023 Pinot Grigio was harvested in early March and fermented at a cool 12°C to preserve fresh aromatics while building creamy texture through high solids and weekly lees stirring. A small portion was fermented with wild yeasts in French oak barriques to add complexity and palate richness. The resulting wine was carefully bottled under screwcap to maintain its vibrant, elegant profile.
