Santa & D'Sas Ish Sangiovese 2024

This Sangiovese presents aromas of sweet plum, bramble berry, and macerated cherry, layered with subtle kitchen spice. The finish is defined by a characteristic dry and sinewy tannin structure, making it an excellent choice for immediate enjoyment.

This 2019 Sangiovese underwent a 3-day cold soak followed by an 18-day slow fermentation on skins to optimize depth and character. The wine completed malolactic fermentation in concrete vats, where a portion was matured on lees to enhance texture and stability while preserving its natural freshness. This meticulous process resulted in a stable, structurally balanced wine with refined mouthfeel and vibrant fruit expression.
