Santa & D'Sas Ish Fiano 2022

This single-vineyard Fiano features notes of honeysuckle, apple, pear compote, and spice, all balanced by a brisk and refreshing acidity. The palate is both appetite-whetting and cleansing, offering a beautifully expressive finish.

This Fiano was hand-harvested and cold-soaked for 48 hours before being whole-bunch pressed to extract only the finest free-run juice. Fermentation occurred in stainless steel at cool temperatures over 30 days to ensure a pure varietal expression. The wine was then matured on light lees with weekly stirring until October, preserving its signature freshness and texture.
