Thorn-Clarke Sandpiper Riesling

The wine is vibrant pale straw in color with brilliant green highlights. Aromas of lively citrus, perfumed florals, and gentle talc leap from the glass, showcasing true Eden Valley character. The palate highlights fresh-cut lime, fragrant lemongrass, and fine minerality, supported by a beautiful, long acid drive. The result is a finely balanced wine with precision, perfume, and a delicious core of mouth-watering fruit.

Harvested at night, the fruit was pressed within an hour of picking using an airbag press to preserve the delicate Riesling aromas and flavor precursors. After settling, the juice was warmed and inoculated with a neutral yeast to maintain the purity of Riesling. Following fermentation, the wine was stabilized, minimally fined, filtered, and bottled.
