Rockcliffe Third Reef Cabernet Sauvignon 2018

The palate is rich with black, juicy cherries, complemented by savory notes and supported by fine, smooth tannins. The balance of fruit and structure creates a well-rounded, elegant mouthfeel.

The fruit was machine picked, then destemmed and crushed into small open fermenters, where it was inoculated for fermentation. The fermenters underwent twice-daily pump overs with aeration, and the temperature was maintained around 25°C, followed by a long post-fermentation maceration. After fermentation, the wine was transferred to barrel for malolactic fermentation, allowing for a smooth integration of grape and oak tannins. The wine was fined with egg whites and bottled after 10 months of maturation.
