Rockcliffe Quarram Rocks Shiraz Cabernet 2018

This wine presents a deep maroon color with a subtle purple hue. The nose is vibrant and lifted, offering spicy redcurrant aromas with underlying notes of cassis and a hint of dark chocolate. On the palate, fresh passionfruit and tropical fruit flavors emerge, balanced by a crisp, herbaceous finish that reflects its cool climate origins. The wine delivers a harmonious combination of fruit, spice, and complexity, with a refreshing and structured finish.

The Shiraz and Cabernet grapes were machine picked, then destemmed and crushed into small fermenters, where they were inoculated for fermentation. The fermenters underwent twice-daily pump overs with aeration, and the temperature was maintained around 25°C to allow for a long ferment maceration. The Cabernet portion received additional post-ferment maceration to help soften and integrate the tannins. After fermentation, the wine was transferred to barrel for malolactic fermentation, ensuring a smooth integration of grape and oak tannins. The wine was then fined and bottled.
