Dols Yarra Valley Syrah

Opaque violet in colour, the bouquet is rich and complex, with vibrant aromas of mulberry and plum, enhanced by black pepper, spice, and a touch of seasoned oak. The palate is balanced and harmonious, offering a refined blend of savoury, fruity, and spicy elements, with flavours of plum and purple fruits supported by subtle oak influence. This wine is poised to develop further with age, promising added depth and character.

The fruit is sourced from Yarra Valley floor vineyards, then crushed and de-stemmed into open fermenters, where it is pumped over twice daily for optimal extraction. The wine spends 8 days on skins and is inoculated with FX10 yeast to enhance elegance and structure. After fermentation, the wine is matured for 12 months in seasoned French hogsheads, allowing for integration and refinement before bottling.
