Dols Yarra Valley Pinot Noir

Vibrant cherry red in colour, the bouquet is expressive, with vivid aromas of violet, cranberry, and red fruits, complemented by a hint of savoury oak. The palate is fresh and lively, with bright red fruits and blueberries, supported by chalky tannins and a savoury, lingering finish that adds depth and complexity.

The fruit for this wine is sourced from the Murrumong and Willowlake vineyards. After de-stemming, the berries are kept intact and placed into open fermenters, where they are inoculated with a combination of RB2 and F83 yeasts to enhance fruit expression and colour. The wine is pumped over or plunged twice daily, depending on the desired tannin extraction and colour intensity. It spends 10 days on skins before being aged for 9 months in French hogsheads, with 15% of the barrels being new. The wine is also vegan-friendly, made with minimal intervention throughout the process.
