Dols Yarra Valley Chardonnay

Light straw in colour, the bouquet is a delightful blend of nectarine, toasty oak, and butterscotch, with a subtle hint of minerality. The palate is fresh and vibrant, offering bright flavours of cumquat and apricot, with a crisp, light finish that is both lively and refined.

Sourced from the Valley floor, Murrumong, and Yarraland Vineyards, the fruit is a mix of whole bunch and crushed de-stemmed before pressing. After cold settling and racking with light solids, fermentation occurs in a blend of seasoned and new oak (20%), inoculated with CX9 and CY3079 yeasts to balance fruit and toasty flavors. The wine matures for 9 months in seasoned French hogsheads and is vegan-friendly.
