The grapes, harvested from vines averaging 20 years old, are traditionally dried in drying rooms without controlled temperature or humidity. They rest on racks for 78 days before being crushed in late November. The wine then ages for 7 years in 50-100 hectoliter Slavonian oak barrels, followed by a minimum of 8 months of bottle maturation, allowing it to develop depth and complexity.
