Butterfly Prosecco DOC Rosé Millesimato Extra Dry 2023 Astoria

The bead (fine bubble) is small and persistent. The colour is a pale pink with an elegant aroma that's also fruity, floral and rich. The taste is characteristic, pleasantly mouth-filling and balanced.

The harvest is done by hand, followed by soft pressing and static decanting of the must. Primary fermentation in steel at 18°C with selected autochthonous yeasts. The red grapes are part vinified separately, with a short maceration that gives the wine colour and that typical character that is so sought-after by the ‘classic’ sparkling wine makers, with a particular scent and a full body.
The wine is kept on lees for a month, filtered and decanted into the autoclaves for second fermentation. Refermentation takes place at 18°C again with selected yeasts and lasts about 20-25 days, followed by 40-50 days of ageing on the yeasts. Bottle aged for a few weeks.
